Hummus



Hummus, originally uploaded by speedvegan.

14 ounce canned chickpeas
2 garlic cloves
juice of 1 large lemon
6 tbsp tahini
2 tbsp olive oil
cumin
salt and pepper
paprika
black olives
whole wheat pita bread

1. Drain chickpeas. Reserve a little of the liquid. Put the chickpeas, garlic and a little of the liquid in a food processor and process. Add remaining liquid and lemon juice. Blend until smooth.

2. Spoon the hummus into a large serving dish. Sitr in the tahini and all but 1 tsp of the olive oil. Season with cumin, salt and pepper.

3. Smooth the top and drizzle remaining olive oil. Garnish with paprika and olives.

4. Cut whole wheat pitas into wedges and serve together with the hummus.
