Fancy Quinoa with Tofu
I usually ask Jose what he’d like to have for dinner. I don’t always make what he wants, but most of the time he gives me great ideas. He asked for quinoa which we haven’t had in a while. So I made a fancier version of a basic recipe I posted earlier.
2 cups water
1 cup quinoa
2 tbsp olive oil
16 oz extra firm tofu, drained, pressed and cut into cubes (*)
1/2 green pepper, chopped
1/2 orange pepper, chopped
1 small zucchini, chopped
1 tbsp soy sauce or tamari
1/2 tsp ground cumin
1/2 tsp ground coriander
1/2 tsp ground ginger
1/2 cup sliced almonds, toasted
1/2 cup raisins
salt and fresh ground pepper (to taste)
1. Bring water to a boil and add quinoa. Cover and simmer for 8-12 minutes until quinoa has absorbed all the liquid. Remove from heat and allow to cool.
2. In a large skillet, heat olive oil over medium-high heat. Add peppers and zucchini and cook for 2-4 minutes.
3. Stir in tofu and cook for another 2-4 minutes.
5. Add soy sauce, cumin, coriander and ginger. Mix well and cook for another minute.
6. Remove from heat and add to quinoa. Stir in almonds, raisins, salt and pepper. Serve immediately.
This was really yummy. Jose had seconds !
