Black Bean Dip
I felt like having something Mexican for lunch, but Jose and I had a late breakfast so we were both stuffed around lunch time. I made this dip and we ate it with blue corn chips. He loved it.
1 15oz can refried black beans
1/2 small red onion, chopped
1 clove garlic, minced
1 1/2 tbsp olive oil
1 1/2 tsp white wine vinegar
1 1/2 tsp lime juice
1 tsp tamari
1 tsp nutritional yeast
1 tbsp dried parsley
1 tsp mexican seasoning
1/2 tsp chili powder
1/8 tsp ground cumin
1/4 tsp salt
cayenne pepper (to taste)
fresh ground pepper (to taste)
Combine all ingredients in a large bowl. Mix well until smooth. Serve with chips !
