Mexican Lettuce Wraps

Mexican Lettuce Wraps, originally uploaded by speedvegan.

This is a variation of my awesome salsa. I felt like having lettuce wraps with a Mexican kick. I hope you enjoy these !

1 (15oz) can black beans
1 (15oz) can corn kernels
1 english cucumber, chopped
1 large tomato, chopped
2 tbsp cilantro, chopped
salt and fresh ground pepper
1 head iceberg lettuce

For the sauce:
2 tbsp white wine vinegar
1 tbsp olive oil
2 tbsp lime juice

1. Drain black beans and corn. Place in large bowl and mix in cucumber and tomato.

2. In small bowl, mix together all sauce ingredients.

3. Pour sauce into bowl of veggies. Mix in cilantro. Add salt and fresh ground pepper to taste.

4. Place spoonfuls of salsa in iceberg lettuce leaves. Wrap and serve.

You can top these with sour cream if you want. Yum !

my Saturday ride turned into a survival test as i battled 21mph crosswinds. i turned around after nearly getting thrown in front of a moving vehicle. the rest of the week i tried to make up for the lousy training the week prior.

friday 04.28:
* rest day

saturday 04.29:
* 12 mike bike ride

sunday 04.30:
* 35 min run

monday 05.01:
* 1hr spin class

tuesday 05.02:
* 3.5 mile run
* 20 min swim
* 20 min bike @ gym
* strength training: legs, abs

wednesday 05.03:
* 1hr spin class
* strength training: upper body, abs

thursday 05.04:
* 800 meter swim (ladder)
* 20 min run
* strength training: abs

my goals

tomorrow is the MS Bike Tour. first, i want to thank those who contributed to this great cause. there were some “anonymous” pledges which might have come from some of the readers of this blog, so this is a general ‘thank you’ ! i wish it could be more personal.

this year will be a bit different than previous years. i will ride alone most of the time so i will have a lot of time to think. there will be several people i love very much waiting for me at the end which will help me keep motivated when the wind is kicking my ass.

i came up with some goals for this year:

* thank every volunteer – connect
* focus on nutrition – finish strong
* get outside of myself – it’s not about me
* enjoy the ride – don’t miss a moment

i guess i always have the same goals, but this year i want to focus on the last two. it is very important to understand that this is bigger than me. i am riding for others, not for myself. i also want to enjoy every mile. i don’t want to take any piece of this ride for granted.

i will write more after the ride. hopefully i will have some good photos to share !
