Today is the first day I have felt “normal” since the accident. I was able to walk around limp-free. My head didn’t feel like a pressure cooker. I even felt like doing something creative in the kitchen. I succeeded in making something incredibly yummy, but failed to take pictures so i am going to post about what I made Monday night. I’ve been trying to eat plenty of whole grains to help my recovery.
1 cup quinoa
2 cups water
1 tbsp olive oil
1/2 tsp salt
1/2 tsp dried thyme
1 (15oz) can lentils, drained
1/2 tsp ground ginger
1/4 tsp ground cumin
1/4 tsp ground coriander
1/4 tsp ground cinnamon
1/2 cup dried currants
salt and pepper (to taste)
1. Bring water to a boil and add quinoa, olive oil, salt and thyme. Cover and simmer for 8-12 minutes until quinoa has absorbed all the liquid. Remove from heat and allow to cool.
2. In a large bowl, combine quinoa, lentils and spices.
3. Stir in dried currants and serve.
We ate this with broccoli. It was delicious !

YAY! I am so glad you are up and around and feeling well enough to cook. This is a great “sign” and I wish you more swift and sure recovery, SV. I’m with you, girl! And btw, the food looks darn good! *HUGS*

I did a little sumpin’ sumpin’ with lentils yesterday too!
I’m sorry that I haven’t been around much I noticed that with my blogroll it doesn’t tell me when the blogsome or word press people update…bummer! I will be better about that!

It does look delicious! My kids like quinoa but are not too excited with anything lentil dishes I make. This might do the trick.
Canned lentils- I don’t think I’ve seen any at the stores. But not to worry, I always have the dried kind handy.

Kaivegan: i don’t think my boyfriend is a huge lentil fan either and he actually liked this a lot. the key was to put something sweet in it.
my whole foods store carries organic canned lentils which are surprisingly good. i wish i had the time to make some fresh, but i had to improvise this week. thanks for your good thoughts !
