as usual, i took the elevator down last night after a somewhat stressful day at the office. it stopped at the 5th floor and an older man walked in, looked at me, smiled and said “alone together at last.” i smiled back politely and held my breath until we reached the lobby.

I had a craving for scrambled tofu tonight. My appetite is back !!

1 tbsp olive oil
1/2 red onion, chopped
1/2 green pepper, chopped
2 cloves garlic, minced
8 oz extra firm tofu, drained, pressed and crumbled
bragg liquid aminos (to taste)
hot sauce (to taste)
2 tbsp nutritional yeast
1 tbsp lemon juice
1 tbsp water (or more if needed)
fresh ground pepper (to taste)
cajun seasoning (optional, to taste)
1 cup kale, chopped

1. Heat olive oil in large pan over medium-high heat.

2. Saute onion, pepper and garlic for 3-4 minutes. Add tofu and cook for 2 more minutes.

3. Stir in braggs, hot sauce, nutritional yeast, lemon juice and water. Cook for 3 more minutes.

4. Season with fresh ground pepper and cajun seasoning, if desired. Fold in the kale and cook for another minute. Serve with toast.

I’m listing this under “breakfast” but I was very happy to have it for dinner.

there’s a doggy beach about two miles away from my apt. i took Venus there today. she seemed a bit scared at first and wouldn’t leave my side so it was hard to get a good shot of her. overall, i think she had a good time. it doesn’t seem like she gets out much. she’s extremely shy and not very social. also, i wasn’t very prepared since i don’t own a dog. i’m going to take her to the pet store tomorrow for some toys, etc and see what we can do. if my evil scheme works, she won’t want to leave when my cousin returns ! HA HA HA

my cousin is going on a cruise for about 8 days. i will have the pleasure of taking care of her dog while she’s away. Venus is a collie-shepherd mix. she’s adorable and very well behaved. i had a dog when i was little, but haven’t had one for almost 20 years now. i normally dog-sit for friends, but this will be the first time the dog will actually stay with me in my apartment. i’m afraid i won’t want to give her back !!

the first half of the week was brutal. the good news is my appetite is back now and i’m all caught up on sleep. life is good again.

as organizer of the South Florida Vegetarians & Vegans meetup group, it is my responsibility to plan events each month. last year, we had a Thanksgiving Day Feast at the park which turned out to be a smashing success. one of the members suggested we make it an annual event. this member, Paul, passed away earlier this year after a rough battle with cancer. this year, i decided to hold the same event in his memory. it was a wonderful way to remember him and a good way for vegans to come together on such a dreaded holiday for us. my cousin who is also vegetarian and her dog were staying with me, so they joined us. my best friend also come along with her dog. we had an incredible time. the weather was perfect (although somewhat cold for some – Floridians !) and there was plenty of good vegan food for everyone. i can’t wait to host this event again next year.

for the past 5 years and 2 months, i have worked 25 miles away from home. recently, the company i work for was bought out by a firm based about 5 miles away from my apartment. the actual move finally happened today. it’s about time my luck started to change, huh ?
