i had to take my friend to the hospital this weekend. when we arrived, the security guard asked me for my ID. he said “so, your name is Liz. my name is Fe. together we would be Feliz (“happy” in Spanish).” :-|

like my friend said, “you have to admit that was much, much better than … ‘Do you comment your code?’ ;) ” but still…

this was a bad week. something really traumatic happened on Friday night which threw my week off completely. things were sort of back to normal towards the end of the week tho so it’s all good. :-)

Sundried Tomato Nut Pate

I made another yummy pate this weekend for the veggie group’s holiday potluck. It was a hit and some people asked for the recipe so here it is !

1 cup walnuts
1 cup pine nuts
1 cup sundried tomatoes
2 tbsp olive oil
1/4 cup lemon juice
2 tbsp parsley, finely chopped
1 tsp lemon thyme, finely minced
1 tsp chives, finely minced
1 tsp sea salt
1/4 tsp fresh ground pepper

1. Soak walnuts overnight (about 12 hours). Drain.

2. Soak sundried tomatoes for 1 hour. Drain, reserving some of the water.

3. Place the nuts and sundried tomatoes into a food processor and process until almost smooth. Add the rest of the ingredients and continue to blend until paste reaches desired consistency. Add some of the sundried tomato water if paste is too thick.

You can eat this with bread, chips or in a leafy salad.

my friend teaches the Monday night spin class. she’s pregnant and has given up her class. the sub is not-so-good. i’m having a hard time debating whether to start doing something else Monday nights. hmm… as you know, i can run again. hopefully that will start happening soon.

running into 07

i went back to my sports medicine doctor today for a follow up. he said i’m right on target and gave me the OK to run again. i told him about my feeble attempts followed by pain so he’s sending me back to the physical therapist for a running gait/stride analysis and some more help with muscle strengthening exercises. i’m excited ! being able to run again will be a wonderful way to start the new year. happy happy. ;-)

Sunflower Pate

As I try to eat more raw, I’ve started to play around with some recipes. This is one that was inspired by one of the dishes at Nature Boy, one of my favorite restaurants which is now closed. :-(

1 cup raw sunflower seeds
1/4 cup lemon juice
1 tbsp bragg liquid aminos
2 tbsp raw tahini
2 cloves garlic, chopped
2 scallions, chopped
2 tbsp red onion, chopped
2 tbsp parsley, chopped
dash cayenne pepper (or to taste)

1. Soak sunflower seeds for 12 hours. Drain and sprout for about 4 hours. Then thoroughly rinse and drain again.

2. Place all ingredients in a food processor and process until the mixture is a smooth paste.

3. Adjust seasoning if needed. Yields 2 cups.

This is very delicious as a dip for raw veggies or in a salad.

the week got off to a great start, but then i caught the flu bug Monday night. i woke up feeling like crap on Tuesday. i somehow made it through spinning on Wednesday, but that was a big mistake. my HR hovered around 160 the entire time so i rested again on Thursday. i hope everything is back to normal next week. :-)

swimming crash course

my knee was hurting so much yesterday that i actually skipped my regular Monday night spinning class. i met Bill at the pool instead. we worked on my swimming technique which desperately needed help. he criticized EVERYTHING i did and made me correct it. at first, it was overwhelming, but he said it was rewarding to teach me cos i caught on quickly. that made me feel better about my efforts. i honestly feel like my swimming improved 100% after yesterday’s informal training with Bill. i hope i can get him to work with me a few more times before he leaves to Italy for 6 months. :-D
