Sundried Tomato Nut Pate

I made another yummy pate this weekend for the veggie group’s holiday potluck. It was a hit and some people asked for the recipe so here it is !

1 cup walnuts
1 cup pine nuts
1 cup sundried tomatoes
2 tbsp olive oil
1/4 cup lemon juice
2 tbsp parsley, finely chopped
1 tsp lemon thyme, finely minced
1 tsp chives, finely minced
1 tsp sea salt
1/4 tsp fresh ground pepper

1. Soak walnuts overnight (about 12 hours). Drain.

2. Soak sundried tomatoes for 1 hour. Drain, reserving some of the water.

3. Place the nuts and sundried tomatoes into a food processor and process until almost smooth. Add the rest of the ingredients and continue to blend until paste reaches desired consistency. Add some of the sundried tomato water if paste is too thick.

You can eat this with bread, chips or in a leafy salad.
