Banana Chai Muffins
This is what you want to make when you’re having guests over because it will fill your home with an amazing aroma of banana and chai spices.
2 cups all-purpose flour
1 tbsp baking powder
2 tsp ground cinnamon
1 tsp ground cardamom
1/2 tsp ground ginger
1/4 tsp ground cloves
1/8 tsp ground black pepper
3/4 tsp salt
3/4 cup sugar
1 large ripe banana, mashed
2/3 cup lite coconut milk
1/4 cup canola oil
2 tbsp molasses
1 tsp vanilla extract
1. Preheat oven to 350 degrees. Grease or line a 12 muffin tin and set aside.
2. Sift flour, baking powder and spices into a large bowl. Stir in salt and sugar.
3. In a separate bowl, whisk banana, coconut milk, canola oil, molasses and vanilla extract until combined.
4. Use a wooden spoon to create a well in the dry mixture bowl. Pour wet ingredients into well and stir until JUST combined. Do not overmix !
5. Spoon batter muffin tin. Bake for 20 minutes or when toothpick comes out clean.
6. Allow to cool on a rack before you enjoy these delicious treats.

I made these muffins tonight and they were very good. You were right, the whole house smelled wonderful while they were baking. I also added vegan chocolate chips to some, walnuts to others, and left the rest plain. All three varieties were delicious. Thank you for sharing your recipe.

I have eaten vegan baked goods from a specialty bakery and wasn’t a big fan of their products – I’m not a vegan and am used to animal products. Are these muffins more for the vegan palate?
I’ve never been a fan of animal products and can’t remember the last time I had a non-vegan muffin, so I can’t really answer your question. I’ll forward this to my boyfriend though who might have a better answer for you since he is not vegan.
Hi Kathy – as someone who swims on both sides of the pool, I have to say these are EXCELLENT.
You don’t to think of them as vegan, just as normal food that happens to use margarine and oil instead of butter and eggs.
In my experience, vegan baked eating stuff is much better home-made than from a bakery, so give them a try – if they don’t come out delicious, post back your results for some tips!
And – most people seem to forget that ‘vegan food’ is just a subset of what they eat already. It’s not as strange and scary as you think (if you still think it is, pick up and apple and take a good look – not so scary!).
