Jet lag + dehydration * exhaustion is not a good formula for long distance running. I learned that lesson yesterday.

I didn’t sign up for this race before I left because I wanted to make sure I’d still be up for it after the long trip back home. Also, I didn’t know if our flight would be delayed (like last year), etc. That said, I left with the intention of running the race and training for it while away. And I did. With Geoffrey’s help, I managed to get in most of my training runs.

We arrived Friday night, tired and weary. We slept like logs through Saturday. I felt somewhat rested and decided to head over to the expo and register for the race. Looking back on it now, someone should have locked me up instead.

I woke up at 3am on Sunday and couldn’t go back to sleep. I took that as a good sign, thinking “at least I’m awake.” Surprise ! I can be a bit naive sometimes.

Don’t let the numbers fool you. Yes, I PR’d, but it cost me dearly. The run was painful, physically and mentally. I tried to talk to myself, count trees, light poles, all the usual motivational crap. My body just wasn’t cooperating.

Somewhere around Mile 8, a woman was giving out… beer. Really ? How about a barf bag ? Seriously. I felt nauseated the entire time, especially during the last 100 meters when the woman just ahead of me lost her gels. Ick. I was too dazed to even appreciate crossing the finish line, but something inside me was glad it was finally over. Another lesson learned. On the plus side, I still have all my toes.

Couscous with Veggies and Pistachio Vinaigrette

At some point during our relationship, Geoffrey and I established a “dinner and movie date night” tradition. For dinner, we go to Tarpon Bend in Downtown Ft Lauderdale. The only veg option in the menu is a surprisingly delicious wrap filled with couscous and roasted veggies. Conveniently, the movie theater is only a short walk from the restaurant and there are plenty of bars with live music in the area for those times when we’re feeling extra adventurous.

I recently attempted to make something like the filling in the wraps and was pleasantly surprised with the results, so I’ve decided to share the recipe. I hope you’ll enjoy it as much as we do.

2 large portobello mushrooms, chopped
1 medium zucchini, chopped
1 medium summer squash, chopped
1 red bell pepper, seeded and chopped
1 cup couscous, uncooked
salt and pepper (to taste)

Pistachio Vinaigrette:
1/4 cup pistachios, shelled
1/2 cup olive oil
2 tbsp balsamic vinegar
1 clove garlic, pressed
1/4 cup fresh basil, roughly chopped
salt and pepper (to taste)

1. To make the vinaigrette, toast pistachios for 5 minutes. Allow to cool. Place pistachios and remaining ingredients in a food processor and process until smooth. Set aside.

2. Preheat oven to 400 degrees.

3. Pour vinaigrette over veggies and stir until well coated.

4. Roast marinated veggies for 30 minutes.

5. In the meantime, cook couscous according to package instructions.

6. Transfer couscous to a large bowl. Fold in the roasted veggies. Add salt and pepper to taste and serve immediately.

Hi ! I’m back from down under. I wasn’t able to blog while away because roaming data charges are astronomical – a lesson I learned when I returned from Toronto last year. However, I’ve uploaded some photos of our adventures in New Zealand and Australia to my Flickr account.

I am incredibly tired and coming down with a cold, but will try to blog yesterday’s race report soon. I hope you’re all doing well !
