Baked mac & "cheese" with broccoli.
I had a similar pre-race dinner that was similar to this. Only without the broccoli and in a bread bowl.

Sounds like plenty of carbs ! I don’t normally pay too much attention to what I eat before a race. Mainly, I just stay away from things that may upset my stomach. I’ll have to start experimenting.
